I am super busy at the moment preparing for my book, writing the blog, redesigning the blog (almost done with that) and getting ready for a new baby sometimes I just need dinner to be on my plate quickly. You don’t have to be rushed off your feet in order to want your meals to be quick anyone can enjoy this recipe and use their spare time for work, like me, or relax in a bath for hours.
you will need;
6oz firm tofu
2 broccoli florets
3oz grated cheddar cheese
2 wholemeal flour wraps
a little oil for frying
mixed curry powder
salt and pepper
Boil a kettle and blanch the broccoli in a pan until it just starts to become tender.
Meanwhile coat the tofu in curry powder and fry in a pan.
Drain the broccoli and arrange onto the base tortilla with the tofu and sprinkle with salt and pepper.
Top the mixture with the cheese and place on the top tortilla. Now you are ready to fry your quesadilla.
Fry on both sides on a medium heat until slightly brown and the cheese has melted.
