Here is another one of the canapés I served at the Superscrimpers buffet on the Christmas special. It is such a simple idea, sometimes the simplest ideas are the best. Potatoes, even mini ones are still filling so serving these makes sure that your guests won’t leave hungry.
Mini baked potatoes and cream cheese
you will need;
baby new potatoes (we served 2 per person, so 40)
2 tbsp. sunflower/vegetable oil
dessert spoon salt
100g cream cheese (adjust this the amount and size of potatoes you use)
Chopped fresh chives to garnish
Rub the oil and salt onto all of the potatoes and bake them in the oven at 180C.
Once the potatoes are cooked and cooled a little split your potatoes and top with cream cheese and chives.
