Here I am back with the first of my Nasi Campur recipes. So whilst your Base Gede is cooling you can begin prepping for this vegetable salad, Sayur means vegetable and Urab means spiced coconut. You can use any combination of vegetables you like I chose these as they are yummy and look pretty together.
you will need;
150g green beans trimmed
80g bean sprouts
4 carrots cut into batons
60g fresh spinach shredded
2 long red chillies
3 hot green chillies
3 garlic cloves
salt for boiling the veg
1 cup dessicated coconut
- Slice the red and green chillies (do not remove the seeds), the shallots and garlic. Fill a frying pan with about 2 inches of oil and fry until the shallots and garlic are golden brown. Try and use coconut oil for this or another flavourless oil with a similar smoke temperature. Drain onto kitchen paper and the mix in a bowl with the coconut, squeeze in the kaffir lime. Mix this together using your hands.
- Meanwhile boil the carrots and the beans in salted water. The salt helps the veg keep its bright colour. Cook the veg so that it still has a bite to it. Drain and leave on the side.
- Now mix the carrots, beans, beansprouts and spinach leaves together. Then add the coconut mixture.
This is a salad dish but it should be eaten the same day as the coconut mixture looses its crunchy quality.
