you will need;
2 large red onions
2tbsp crushed walnuts
6tbsp crème fraiche
dash of balsamic vinegar
2 wholemeal flatbreads
Rocket to serve
- Slice your red onions and shallots and fry slowly to caramelise. Onions have a great natural sweetness. Add a dash of balsamic vinegar to the mixture during the caramelisation process to add extra depth to the flavour.
- Once the onions have completed cooking spread them onto 2 flatbreads. Put the crème in small dollops around each of the flatbreads and place on in the oven on a baking sheet at 200C for 10 mins.
- Once they have heated through remove and cover with fresh rocket.
This will serve 2 or 4 if you serve it with salads. Such as the lovely carrot salad I shared earlier this week.
