Savoury Spinach Muffins – Recipe

 
Muffins are not just for pudding they are for life – well at least in my house. I love looking for new ways to eat 1) Muffins 2) Healthy Food in fun ways and 3) Cheese – this recipe combines all 3 elements and I use baking sheet squares instead of muffin cases as I just felt it looked fancy, questions comments?

You will need;

150g plain flour
60g polenta
2 tsp baking powder
1/2 tsp salt
2 eggs beaten
200g cottage cheese
red chili powder to taste
150 g spinach leaves shredded
1 tbsp olive oil
50g grated mature cheddar plus a little to sprinkle on top

Method;

  1. This one is very very simple – are you ready. Mix everything together in a bowl by hand or a kitchen aid.
  2. When the batter is mixed thoroughly spoon into the lined muffin tins and sprinkle with cheese.
  3. Bake at 200C until a skewer comes out clean.
These can be served warm or cold.
