Tomato & Caper Sauce – Recipe

I am not a big eater of pasta, I like it I just find it a little heavy. In contrast my husband and baby are big pasta fans. I have been trying to find ways to make really light sauces. This sauce is the best as it is not only light but it is also incredibly quick to make. In fact I think if I were to compete in a speed race against Jamie Oliver I would win, even when he is doing the 15 minute range. That is just how fast this sauce is.

I served it on pasta but it could be used on many things. Drizzled on a steak sandwich, a salad, a veggie burger or BBQ corn on the cob, it is really versatile.

fast tomato pasta sauce

you will need;

200g cherry tomatoes (I used a mixed variety but you don’t have to)
1 dessertspoon capers
2tbsp freshly chopped flat leaf parsley
1 large garlic clove
1tbsp lime juice
olive oil (approximately 1/2 cup) 
salt & pepper

method;

  1. This is how fast it is. Place all of the ingredients in a food processor. Turn on a medium/slow speed. 
  2. Slowly drizzle the olive oil in whilst the processor is running, enough to make a nice sauce, about 1/2 a cup.
  3. Now you are done.
