I am a woman who requires only the simplest pleasures in life and sometimes the smug satisfaction of creating a really healthy meal that was quick is all I need. As I am vegetarian and Joe is not, and I cook and Joe rarely does he often ends up as a de facto veggie. I am a perverse human and an even more perverse veggie as I actually like to cook meat for Joe, I like to play with ingredients, but in all honesty unless we have guests it is a waste of time and money to cook two separate meals each time we eat together. So when I can create a recipe that is easily changed up either way, and is full of goodness, and quick and easy to prepare my smugness is off the charts and I am the first to admit I am probably a little obnoxious to be around in those instances.
This is an incredibly easy recipe so be prepared for some pretty precise measurements, (she types in her sarcastic tone).
you will need;
a handful of kale
2 handfuls of rocket
3 cloves of garlic (roasted)
2 cups of mixed mushrooms
1/4 cup olive oil (approx)
1/2 cup lardons or 3 rashers of vegetarian bacon
salt and pepper
- Put the kale, rocket and roasted garlic into a food processor. Whilst it is running pour olive oil into it, enough to make a loose sauce.
- Cook the mushrooms in a small saucepan with a little oil, salt and pepper.
- Boil the gnocchi in hot water. Meanwhile fry up the lardons or veggie option.
- Drain the gnocchi slightly before you think they are done. Mix with the sauce and return to a saucepan to heat through. Serve on 2 plates and top with mushrooms and your ‘bacon’ of choice.
This recipe could easily be made as a vegan friendly meal also by using tempeh. Make sure you have plenty of bread to mop up the oily sauce. You may feel smug after eating such a tasty meal and knowing it is full of health.
