When I am rushing in the morning it is so easy to default to toast but doing the same thing every day is not my style so I have been preparing overnight oats. They also fill me up a lot more than toast so I am not needing to stop for snacks so my time can be focused on work and children until lunchtime. I topped this recipe with my raw granola recipe. You could add soft fruit as well if you wanted to.
The first time I became aware of these oats was when I was pregnant and living in Paris. I was sitting in my French language class and we were covering the basics, telling our teacher, in French, what we had for breakfast and an Australian woman described this muesli, as she called it. Very quickly the entire class decided to question her, none of us had encountered overnight oats before, yes yes I know we must have been living under a rock somewhere.
The best thing about all of this is you can make them in a jar and eat them on the go.

I keep saying that I must try overnight oats as they always sound quick and easy to do, but really delicious! I might have to go and see if I have the bits in the kitchen now to give it a whirl.
