Winter spice chutney – recipe

I think you should always give Christmas gifts that you yourself love and I love eating so I have decided to make lots of foodie gifts this year.


I thought I would share some of the details with you. This is a great recipe that is quick to make and goes well with cold cuts or for my fellow veggies cheese. Lots and lots of cheese – man I love Christmas!

you will need;

1.2kg red onions
500g cherry tomatoes
3 cooking apples – cored peeled and diced
4 tbsp soft brown sugar
6 tbsp cider vinegar
250g fresh cranberries
3tsp mixed spice
1/2 tsp hot chili powder
2 tsp salt
1 tbsp olive oil
1 tsp grated dried ginger
1 tsp freshly grated nutmeg
1 tsp coarse black pepper
1 cup of apple juice

method;
  1. Roughly chop the onions lets say quarter them and thickly slice the quarters as a size guide. (I am lazy and normally food process my onions in cooking DON’T do that for this recipe as it will ruin the consistency.)
  2. Fry the onions in the olive oil keep the pan lid on for most of this process to keep them soft – you don’t want crispy fried onions. When the onions are all soft add the rest of the ingredients.
  3. Simmer for half an hour or until the consistency is thick. Add more sugar or spice to your desired taste if you require.
  4. Spoon into sterilised jars and make pretty labels.
