Baked avocados – recipe

Are you still feeling the January sluggishness? Well my detox is all about goodness in as opposed to diets, I don’t do denial and dieting, they are swear words in this house. This recipe even has cheese. So why does this recipe make it into the detox series? The avocados and tomatoes is why.

As well as being great for clear skin avocados are fantastic at clearing the colon. Tomatoes are good for your skin, an anti-oxidant and help protect your skin from sun damage. I made my dish for 3 people.

you will need;

3 avocados
1 400g tin tomatoes
60g hard cheese
salt and pepper
2 tsp mixed herbs


  1. Peel and halve your avocados and place centre down in an oven proof dish.
  2. Heat your tomatoes and herbs in a pan. When the flavour has infused and the liquid reduced whiz your tomatoes into a smooth sauce and pour over the avocados.
  3. Sprinkle with the cheese and bake at 180C for 25mins.
  4. Serve hot.

    This sounds great, can't believe I've never come across cooked avocados before! I love them, and cheese and toms. I can't be doing with diets etc either x
