Okay so you have a to do list that grows by 3 every time you are ready to tick one thing off you know the sort of week I mean well I have one of those months where I have been continually chasing my tail and never getting ahead. There is nothing better for those times than a great recipe that you can knock up in minutes and this is one of those. Plus have I ever told you that broccoli is one of my favourite vegetables well if I have I will tell you again because broccoli is awesome! I first bought Risoni pasta on a whim because it was small and cute but it has paid off for quick recipes as it takes no time to cook.
You will need;
1 1/2 cups Risoni/Orzo pasta
120g broccoli florets
200g soft cheese (such as Philadelphia)
2 garlic cloves
Salt and pepper
2tsp dried mixed herbs
- Boil your pasta according to the packets instructions and blanch the broccoli.
- Fry your garlic and then add the broccoli, pasta herbs and seasoning.
- Last but not least stir through the cream cheese and serve.
A great quick dish. My husband loves to douse everything in balsamic vinegar pictured below – he is gong through a real balsamic phase.
