Here is a fun quick healthy summer salad. I hate boring salads – a plate of iceberg lettuce with a few bits of tomato and cucumber on a plate is all but banned in our house. I served this salad with sweet potato wedges and leek and cheese sausages, (I will share the recipe for those later).
You will need;
2 large courgettes
2 red chillies or 1 smaller hotter one (finely chopped)
Large handful chopped fresh coriander
A splash of white wine vinegar
A splash of olive oil
Salt & pepper
- Use a vegetable peeler to make long strips or courgette.
- Into that bowl have the zest and juice of the limes, a splash of olive oil, white wine vinegar, coriander, salt and pepper and the chopped chillies.
This salad is best left when it hasn’t been sitting for hours but it is so quick to make you can make it last.
I hate waste and love food so the left overs we had had gone a little limp after being in the fridge overnight. I turned it into burger relish by stirring through a spoon of mustard, done and done!
