Is everyone melting in the humid heat as much as I am? One of my New Year goals was to start a cocktail feature on here but then one thing led to another and I became pregnant so cocktails will have to wait a while. The hot weather and my pregnant state is the ideal opportunity for me to create mocktails and other delicious non-alcoholic drinks and if you get really desperate you can always adapt my recipes and a few shots of something more grown up into them.
I am really enjoying iced tea at the moment so I am searching for ways to make various flavours the first in my fruity tea series is this peach iced tea.
you will need;
4 ripe peaches
1tbsp sugar
3tsp rose green tea
1ltr boiling water
method;

Make 1 litre of tea, allow this to steep for only 3 minutes so that the tea does not become too bitter.

Strain the tea into a large glass or ceramic bowl, plastic bowls can alter the delicate flavour of the tea. Whilst the tea is still hot dissolve the sugar into it.

Peel the 4 peaches and cut the flesh from around the stone and leave in the tea. Cover with cling film and leave to cool.

Once the tea has cooled strain the tea to remove the peach pulp. Decant into a bottle or a jug and serve cold
