Hands up if you love brunch. I am taking that as a unanimous and resounding two hands up from everyone. Brunch is amazing and there is a wealth of yummy foods that you can create for eating and the beauty of being a grown up, (as those who know me will confirm I am a super mature proper grown up) is you can eat what you want when you want. If you want a brunch snack for supper you can…and I do.
you will need;
4 slices of white bread
3tbsp crunchy peanut butter
1 large banana, sliced
a dash of milk
maple syrup to serve
Spread your peanut butter onto one half of the two slices of bread. You may find this easier to do if you warm the peanut butter first.
Beat the eggs with a dash of milk, coat both sides of the plain bread and one side of the peanut butter bread.
Top the peanut butter with sliced banana and sandwich together with the soaked bread.
Fry on a low to medium heat until golden brown on both sides.
Serve with as much or as little maple syrup as you like
